Breakfast, it’s what’s for dinner.

Breakfast foods are fantastic. The best part is you can eat them at any time of the day: breakfast, brunch, lunch, and my personal favorite, for dinner. After a long day at work, there is just something comforting about a big stack of pancakes and a side of bacon. Yum.  And let’s be honest, bacon makes everything better.

Now, onto what I actually cooked for dinner. I made my take on Huevos Rancheros. I saw this on a brunch menu a few years ago and it is now one of my favorite items to order when I’m out. Most of my recipes stem from looking in my fridge to see what I can make out of it, using inspiration from certain meals I’ve had before. This recipe is heavy on the protein. It contains eggs, black beans, and ground beef. You can easily make this Vegetarian style without the ground beef. I also did not use a traditional tortilla as the base for this dish. The black beans were enough of a base for me. The flavors in this dish are what attract me to it. I love using cumin with eggs, I think they compliment each other really well. The combination of eggs, salsa, and cheese, so delicious! Also, this recipe is great because you can easily adapt it to your food/diet preferences. See what works best for you.

Recipe: Huevos Rancheros

2-4 Servings – 5 min. prep – 15 min. cook time

Ingredients

2 eggs per person

1 can of black beans

½ C cheddar cheese

1/2lb ground beef

1 jar favorite salsa

Sour cream if desired

Seasoning for Ground Beef

2 tsp Cumin

2 tsp Chili powder

1 Tbsp salt and pepper

2 tsp garlic powder

2 tsp onion powder

2 tsp paprika

Directions

  1. Heat pan to medium-high heat. Add ground beef, cook until brown. Breaking up into small pieces
  2. Once completely brown, add in spices. Remove from the pan
  3. Lower heat to medium. Add the black beans to the pan. They just need to be heated through, about 5-7 minutes. Remove from pan
  4. Add oil to the pan, a couple turns around the pan. Add 2 eggs at a time (if cooking more). Season with salt and pepper. Cook 4-5 minutes
  5. Flip over once. Cook another 3 minutes. Add the cheddar cheese to melt on top
  6. Start constructing the layers. Add black beans and ground, slide the eggs on top. Add salsa and sour cream, if desired
  7. Enjoy!

**Multiple variations and ingredients can be used for this recipe. Add guacamole or use a traditional tortilla as the base of this**
