Fire Feta Dip

Ladies nights are a staple in my friend group. We try to do them once a week; Whether it’s going out for happy hour or it’s a movie, in our PJ’s, drinking wine, like adults do. They are a fabulous bunch of women and I feel very lucky to call them friends. Ladies night are notorious for having a wide variety of snacks. We all have our favorites: pretzels, veggies and hummus, some sort of baked good made by our Resident Baker in the group, and probably some more pretzels.

As we all know, life gets busy and sometimes there is a limited time you have from when you get home from work until it’s time for ladies night. On those nights, I use my go-to easy appetizer recipe for Fire Feta Dip. It’s simple, quick, and all you have to do is put all the ingredients into a blender. It’s that easy! There is also a recipe for quick pita chips as well. But there’s nothing wrong with store bought in a time crunch. Currently on a ‘no-processed food’ meal plan, which is why I chose to make pita chips/tortillas. More details on that later…

Recipe: Fire Feta dip and pita chips

4-8 Servings – 5 min. prep – 10-15 min. cook time

Ingredients

Fire Feta Dip

1 jar (15 oz) Roasted Red peppers, or 3 whole peppers, roasted in the oven

2 tbsp lemon juice

1 5 oz container Feta, crumbled

2 cloves Garlic

1 tbsp Olive oil

 

Pita Chips

1 package of 8’’ flour tortillas

2 tbsp Olive Oil

1 tsp salt and chili powder

Directions

For Fire Feta Dip

  1. Combine all ingredients in a blender. Pulse for a thicker dip or blend for a smooth consistency
  2. Enjoy!

For Pita Chips

  1. Preheat oven to 400°
  2. Cut each tortilla into 8 pieces. Put into a bowl
  3. Add the Olive Oil and spices. Mix to coat all pieces evenly
  4. Put foil onto a baking sheet. Make a single layer of the tortilla pieces
  5. Bake 10-15 minutes, depends on how crispy you like them
  6. Repeat steps 4 and 5 if necessary, until all chips have been baked
  7. Enjoy!
