General Tso Cauliflower

Hello Meatless Mondays! If you haven’t heard, Cauliflower is in. This seems to be the new trend in the food world. Cauliflower rice, cauliflower pizza dough, and cauliflower bites with any kind of sauce you can think of. Naturally, I had to try them all! Cauliflower rice in a stir fry dish, great low-carb alternative. Cauliflower pizza dough, can’t even explain how delicious this was. You can even alter it the slightest bit and have Cauliflower bread sticks. YUM. Cauliflower bites were the last on my list to try and boy did they not disappoint.

I really love Chinese food but rarely eat it due to calories and sodium content. I decided to use these Cauliflower bites as my sneaky low-carb, low-sodium Chinese alternative. Sesame sauce is my go-to however all I kept hearing about was this General Tso sauce. I figured let’s give that a try and see what happens! I generally don’t like spicy food, which is what General Tso sauce is. I added some lime and honey to it, cuts the heat very nicely. You get a little sweet and spicy going on on your taste buds. I also used Panko breadcrumbs as the outer layer on the cauliflower. I like the crunch it gives to it and it can soak up the sauce while staying crunchy. Sogginess, when you want crunch, is unacceptable.

This recipe can be adapted to use any sauce you’d like: Sesame sauce, Buffalo sauce, maybe even Garlic Parmesan?! The possibilities are endless.  You can also try to use broccoli florets as well. The next time Monday rolls around, get creative and try something new. Meatless Monday can be as exciting as any other day of the week. Think of it as the one (and only) perk to a Monday.

Enjoy! xo
